Produced on a fish farm near Venice, Caviar Giaveri company raises ten different species of sturgeon, such as Osetra and Sbrocco, which have disappeared from their natural habitat. All the sturgeons bred are species of Russian origin, from which a wide variety of types of caviar can be produced.
The story of Caviar Giaveri is a fantastic example of how the expertise of Italian gastronomy complements traditional Russian and Iranian caviar-preparation methods. Dedicate salting is carried out using the traditional Russian manner salt method, where only a small amount of salt is used, but caviar is hand-packaged in a sterile controlled environment.
Same care and dedication is used during the preparation of sturgeon meat. It is frozen in a controlled environment or transformed into other high-end gourmet products.
